Ah I see why you’re trying to be careful then! I have heard good things about baking with beans, although I haven’t tried it :) I hope you find some good recipes! My mentor is a vegan and her husband bakes. I could ask them for advice if you want?
Yeah my actual personal philosophy is that if you’re going to eat something, just eat it lol. That the full fat, most unaltered version is likely the best thing for you, as opposed to eating something packed with substitutes and artificial whatever. But when I’m pregnant that all kind of goes out the window and I just have to do what I have to do to get through 40 weeks haha. =P Thank you for the offer! But I think vegan substitutions and low carb are kind of conflicted in that I can eat as many eggs and as much butter as I want but they can eat sugar, you know? At least from what I remember of my sister being a vegan, the things she substituted usually upped carbs more than negated them.
The thing with substitution is that you can really mess up the consistency of a baked good by changing the flour. You usually have to replace more than one (in my experience) and that’s okay, just really tedious. Also, brownies should be bad :)
Yeah a lot of these are just crazy substitutions every which way and I doubt they have the real consistency of brownies, you know? I was honestly looking for ones made with beans as I heard good things about them so hopefully I’ll find some. I totally agree BTW that brownies are meant to be bad haha! =P If I weren’t pregnant I would totally go to town on a box of those without feeling bad. Buuuut just doing a google search on “gestational diabetes baby” is scary enough and I already had one (though I was really really good about my sugar then too, I’m just double nervous with twins.) It’s really stupid to get terrible cravings and then not be able to eat anything haha! ;-)
uh… no I want regular flour because when you substitute one ingredient you can mess up the entire taste/consistency?
I THINK, though obviously I have never looked up any info on almond flour as I’ll pretty much die if I ingest it lmao, that the reason they’re using it in these recipes is that it’s lower carb than regular flour. I’ve started to see some coconut ones — though who the heck knows where you can even buy coconut flour lol — and I can eat that. These recipes are pretty iffy to begin with though TBH because everything is a huge amalgamated substitution. ^^;;; I mean, low carb brownie is basically an oxymoron to being with. -_- But I’m totally scared to change anything though or sub it back to regular flour because as bad as I am with cooking, I’m an even worse baker… >_>
Also: Holy FUCK do people love to sub almond flour for regular flour in low carb baking. O_O Good thing I’m allergic to almonds…

Also, I want brownies. Like an entire plate of them. But until I get put on Humalog, I won’t eat them. But I might go searching for some lower carb recipes and posting them. Head’s up. ;-P
